I know some people who have the same things for breakfast every single morning. That’s definitely not me. I don’t think I eat the same thing for breakfast twice in one week.
I made these chia puddings when I was trying out some healthy dessert recipes and I left a few in the fridge. They turned out to be the perfect little breakfast on the go.
The jam gives such a good sweet and tart kick that you don’t need any extra sugar in the chia layer.

Ingredients
For the Jam:
- 150g strawberries
- 50g raspberries
- 3T chia seeds
- 3T maple syrup
- 5T water
- ½ tsp vanilla paste
- pinch of cinnamon
For the Chia Layer
- ½ cup chia seeds
- 1 cup coconut milk
- ½ tsp vanilla paste
- ½ tsp cinnamon
Toppings:
- strawberries
- shredded coconut
- chopped nuts
Instructions
- Using a saucepan over medium to high heat, bring the berries, maple syrup and water to the boil then reduce the heat to low and allow the berries to reduce down for 10 minutes then remove from heat
- Add the vanilla paste, cinnamon and chia seeds. Stir well and leave to thicken for 5 minutes
- In a separate bowl combine the chia layer ingredients. Stir well and allow to thicken
- Layer 3 jars starting with the chia jam, then the chia layer and topping it off with fresh strawberries, shredded coconut and chopped nuts
