Peach, Orange and Ginger Smoothie

Ingredients
  • 3 ripe peaches
  • 1 cup coconut water
  • ½ cup orange juice
  • 1 mejool date
  • 1 cm piece of ginger
  • 2T plain coconut yogurt or plain yogurt
  • 1 handful of ice cubes
Instructions
  1. Bring a pot of water to the boil. Using a knife, make a cross in the bottom of the peaches then pop them in the pot of boiling water for 35 seconds or until the skins start to peel away then remove from the water using a slotted spoon and set aside to cool.
  2. When they are cool to touch remove the skins and cut the peaches in half removing the pit. Add the peaches to a blender along with the rest of the ingredients and blend until smooth.
  3. Serve right away or keep in the fridge for up to 2 days.
