Raw Chocolate and Cherry Brownies

Ingredients
  • 3 cups of pecan nuts
  • 3T linseed meal
  • 6T cacao powder
  • 1 cup desiccated coconut
  • 2 cups of dates soaked for min 30 minutes and then drained
  • 4T coconut oil
  • 2 T maple syrup
  • 1 handful of almonds roughly chopped or crushed with a pestle and mortar
  • 15 fresh cherries pitted
Vegan Chocolate Frosting
  • 4T melted coconut oil
  • 2 T maple syrup
  • 3T cacao powder
Instructions
  1. In a food processor blitz the nuts until they form a fine crumble
  2. Add the linseeds, coconut, cacao powder, dates, coconut oil and honey and process until well combined. You may need to do this in 2 batches depending on the size of your processor.
  3. Divide the mixture in 2 and gently need one half of the mixture into a square baking tin lined with baking paper.
  4. Lay the chopped pitted cherries over the top and sprinkle the chopped almonds over.
  5. Then need the second batch of the mixture over the top. Cover with another sheet of baking paper and press down firmly to even it all out then place in the fridge for 20 minutes before serving to "set"
  6. For the frosting combine the coconut oil, cacao powder and maple syrup. Whisk together until smooth then spread over the top of the brownies using a palette knife.
