Festive Gifts with Heart: Oven “Sundried” Tomatoes

Ingredients
(for 1 jar)
  • 1 punnet (250g) cherry tomatoes
  • 1T olive oil + enough oilve oil to cover the STD's in the jar
  • sea salt
  • 6 peppercorns
  • optional: a sprig of rosemary and 3 small squares of feta or bocconcini
Instructions
  1. Preheat the oven to 95C
  2. Cut the cherry tomatoes in half and place cut side up on a baking sheet
  3. Drizzle with 1T olive oil and sprinkle a little salt over.
  4. Place in the oven for 3-4 hrs to dehydrate. Check from 3 hours as some ovens may dehydrate faster than others.
  5. Place the dried tomatoes in a jar with the peppercorns and the rosemary and feta or bocconcini if you are using and fill the jar with olive oil.
  6. Tie some string around the top of the jar and add a festive label to create a wonderful gift with heart.
