Festive Gifts with Heart: Oven “Sundried” Tomatoes
- 1 punnet (250g) cherry tomatoes
- 1T olive oil + enough oilve oil to cover the STD's in the jar
- sea salt
- 6 peppercorns
- optional: a sprig of rosemary and 3 small squares of feta or bocconcini
- Preheat the oven to 95C
- Cut the cherry tomatoes in half and place cut side up on a baking sheet
- Drizzle with 1T olive oil and sprinkle a little salt over.
- Place in the oven for 3-4 hrs to dehydrate. Check from 3 hours as some ovens may dehydrate faster than others.
- Place the dried tomatoes in a jar with the peppercorns and the rosemary and feta or bocconcini if you are using and fill the jar with olive oil.
- Tie some string around the top of the jar and add a festive label to create a wonderful gift with heart.
